Feb. 9th:

Snack before morning jog: 2 mandarins

Breakfast: Scrambled eggs with spinach and onion. Bowl of fruit

Lunch: Salad with veggies and chicken breast with olive oil as dressing. Apple

Snack: Lara bar and 2 macadamia nuts

Dinner: Stir- fried chicken with bell peppers and basil (Marnee Thai)

Dessert: 2 mandarins and blackberries

Feb. 8th:

Breakfast: Scrambled egg whites with spinach and onion. 1/2 cantaloupe

Snack: cashew nuts

Lunch: Chicken skewers with carrots and an apple

Snack: Lara bar and almonds

Dinner: Few bites of seared tuna (first time eating fish so having to get used to it), asparagus

Dessert: Fruit bowl with berries, mandarins and grapes

Feb 7th:

Breakfast: Egg white scramble with spinach and onion. 1/4 cantaloupe

Snack: Lara bar and 2 macadamia nuts

Lunch/Dinner (@ Superbowl party): Chicken skewers, fresh veggies, carnitas and fruit salad

Dessert: Slice of chocolate cake

Feb. 6th:

Breakfast: Scrambled eggs with onions. 2 mandarins

Snack: Lara bar, 2 macadamia nuts and an apple

Lunch: Turkey patty with lettuce, onion and pickle. Side salad and side of mixed fruit

Dinner: Chicken stir-fry with basil and garlic and side of sauteed veggies.

Dessert: Grapes, blueberries and lara bar. Diet coke at the movie theatre.

Snack: 2 mandarins

Lunch: Pork chop with kale and an apple

Snack: Lara bar

Dinner: Stir-fry with chicken, garlic, onion and cauliflower. Grapes and berries

Dessert: 1/2 cup coconut milk ice cream

Snack: Lara bar

Dinner: Rotisserie chicken and mixed fruit

Dessert: 2 spoonfulls of coconut milk chocolate ice cream (paleo friendly)

Breakfast: Egg omelet with ham, onion and bell pepper. 1 1/2 slices of bacon and hot chocolate

Snack: banana

Lunch: Spinach salad with lean steak and veggies. 1/2 homemade biscuit

Snack: Lara bar

Dinner: Chicken fajita wrap (Salt lake City airport)

Snack: small bag of pretzels (starving on plane to SF)

Thursday, Jan.28th:

Breakfast: 2 scrambled eggs with spinach and onions, strawberries and blueberries

Snack: Banana (Ate this before first snowshoe hike for quick energy on the trail)

Lunch: Cheeseburger and diet coke (Diner in Yellowstone)

Snack: Lara bar and 2 mandarins

Dinner: Pork chop with vegetable medley of zucchini, cauliflower, asparagus and broccoli

Dessert: Chocolate cake (2nd half of my b-day cake) and an apple

Breakfast: 2 scrambled eggs with spinach. Strawberries and blueberries.

Snack: Lara bar and 2 mandarins

Lunch: Salad with veggies and chicken breast, olive oil dressing and an apple.

Snack: Handful of almonds

Dinner: 3 oz NY Strip steak and broccoli, one glass of red wine

Dessert: Chocolate cake (late b-day cake) and grapes and berries

Tuesday, Jan. 27th:

Breakfast: Egg, cheese and canadian bacon on slice of wheat toast (SF airport). Really bad meal and not satisfying at all.

Lunch: Turkey, cucumber and onion sandwich on wheat bread. 1 clementine (Bozeman, MT cafe)

Snack: Lara bar, banana and 2 clementines, diet coke

Dinner: Chicken breast and asparagus (Finally at cabin and cooking own meals)

Dessert: Berry bowl with strawberries, blueberries, rasberrries and grapes
